Honey, I'm Home Biscuit Casserole

June 8, 2015

This casserole is great for breakfast, brunch, or dinner! If you're a family that settles for cereal, settle no more! Eat like a King or Queen with this easy, tasty alternative that won't leave you hungry an hour later.

What you need:
(Serves 4)
One 8 count can of Pillsbury butter flavored flaky biscuits
6 eggs
Green onion (your preference to how much) - chopped finely
1/2 a bag of Morrell's chopped ham
1/2 small bag of bacon bits
Favorite shredded cheese

** The great thing about this recipe is that you can add whatever "omelet" type ingredients you like!
Other options: chopped red pepper, green pepper, mushrooms, sausage, sweet onions, etc....

 Preheat Oven: 350*
•Scramble eggs in a bowl

*Scary part* carefully open the biscuits (I hate waiting for it to pop open!!!!)

•Cut 6 biscuits into fourths and add to egg mixture

•Chop up veggies and green onion while biscuits are soaking

• Add veggies and ham/bacon to the eggs and biscuit mixture and stir

•Stir in handful (or more) of shredded cheese

• Pour into greased 13x9 pan and top with more cheese

• Bake for 20-30 minutes

Tip: I pulled mine out of the oven because it looked done on the top, but when I stuck a spoon in, it was runny in the middle, so I poked my spoon in a few areas to let some air in and put it back in for 10 minutes and it was done perfectly! Not runny at all!

Husband Rating: 8/10 - he said it would be a "10" if his mouth didn't hurt from his wisdom teeth ;)

Comment with your own version or ideas for ingredients!!

 Simply,

About me

Hello I'm Marisa! No matter how you found me, I'm glad you're here. I definitely don't have it all together (trust me, you should see my closet)- but I know that  each day I wake up, I'm given a chance to start over and live more boldly for Jesus and that in-and-of-itself makes this messy life more wonderful.
